Overnight Oats, White Bean Salad & Turkey Taco Bowls

Start the overnight oats
Combine oats, milk, chia seeds, hemp seeds, and cinnamon in jars. Stir well, seal, and refrigerate. This needs at least 4 hours, so get it going first and leave it alone.

One cutting board session: chop the zucchini, red pepper, and red onion for roasting, halve the cherry tomatoes, and chop the cilantro for the taco bowls.
Roast the salad vegetables
Preheat oven to 425°F. Toss the zucchini, red pepper, and red onion with olive oil, then roast until tender and lightly caramelized.
20 minBrown the turkey and chickpeas
While the vegetables roast, heat olive oil in a skillet and brown the ground turkey. Add the chickpeas and spices, and cook until the chickpeas are warmed through and slightly crisp.

Toss the shredded cabbage slaw with lime juice in a bowl.
Whisk the salad dressing
Whisk together olive oil, lemon juice, oregano, salt, and pepper for the white bean salad.
Combine and portion
Toss the white beans, roasted vegetables, cherry tomatoes, and greens with the dressing and divide into containers. Divide the turkey-chickpea mixture into bowls and top with slaw and cilantro. Slice and add the avocado fresh when you sit down to eat, not ahead of time, so it doesn't brown.
Finish the oats
Once chilled, top each jar with diced pear, a drizzle of honey or maple syrup if using, and shaved dark chocolate.
