Apple-Cinnamon Chia Pudding, Chicken & Pomegranate Bowl, Baked Salmon

Prep Directions

Sequenced so the oven, stovetop, and no-cook items overlap, using both oven racks at once to stay under an hour.

Start the chia pudding

Whisk chia seeds, milk, and cinnamon together in jars. Seal and refrigerate. This needs at least 4 hours, so get it going first and leave it alone.

Prep all your veggies

Preheat oven to 425°F. One cutting board session: chop the rainbow veggies (bell pepper, red onion, zucchini, carrot), halve the Brussels sprouts, dice and thinly slice the apple, mince the garlic, and zest the lemon. Buying pre-seeded pomegranate arils instead of seeding a whole pomegranate saves a few minutes here too.

Roast the veggies together

Toss the rainbow veggies and Brussels sprouts each with olive oil, salt, and pepper, and roast them together on one combined sheet pan. This keeps the second oven rack free for the salmon from the start.

Bake the salmon on the second rack

Season the salmon with olive oil, lemon, garlic, and dried thyme or dill, and add it to the oven on the second rack right alongside the veggies. It'll finish first, so pull it as soon as it's done and let the veggies keep roasting.

Cook the quinoa

Rinse the quinoa, combine with water in a pot, bring to a boil, then cover and simmer.

Season and cook the chicken

While everything else is in the oven, season the chicken with olive oil, garlic powder, and paprika. Grill or pan-sear until cooked through.

6–7 min per side

Whisk both dressings

Whisk the lemon-olive oil dressing for the chicken bowl in one bowl, and the lemon-olive oil dressing for the salmon salad in another.

Build the pomegranate-apple salad

Toss the greens with the thinly sliced apple, pomegranate seeds, and walnuts. Dress just before portioning.

Portion everything

Divide the chicken bowl components (greens, quinoa, roasted veggies, chicken, pomegranate seeds) into containers, dressing on the side. Divide the salmon, Brussels sprouts, and side salad into containers. Top the chilled chia pudding with diced apple, walnuts, and a drizzle of honey or maple syrup if using.
