Prep Directions

Sequenced so the oven and stovetop overlap.

Prep all your veggies

Preheat oven to 425F. One cutting board session: slice the onion and fennel, mince the garlic, finely shred the carrot using the small holes of the grater (or a food processor) so it melts into the oats instead of tasting like chunks of raw carrot, and cube the sweet potato.

Start the oats

Whisk oats, milk, Greek yogurt, finely shredded carrot, flaxseed, chia seeds, and the spices together in jars. Seal and refrigerate. Steel cut oats are denser than rolled oats and need a longer soak to soften properly, so get this going first. When you go to eat, add maple syrup or a sweetener of your choice if you like.

8 or more hours chilled, hands off

Roast the sweet potato

Toss the cubed sweet potato with olive oil, salt, and pepper. Spread on a sheet pan and roast until tender with browned edges.

25 to 30 min

Start the soup base

Heat olive oil in a pot over medium high heat. Add the onion and fennel and saute until soft, seasoning with a pinch of salt as they cook. Add the garlic and saute another minute or two.

10 min

Simmer the broth and meatballs

Add the broth to the pot and season with salt and pepper. Bring to a simmer, then turn the heat down to low. Meanwhile, mix the turkey with garlic powder, salt, and pepper, and roll into small meatballs. Add the meatballs to the pot, cover, and simmer.

15 min

Finish the soup

Remove the lid, add the rinsed and drained canned lentils and simmer uncovered for a few minutes, just until heated through. Taste and adjust the seasoning, adding more broth if needed. Take the pot off the heat and stir in the parsley. When you reheat a portion to eat, you can stir in 1 to 2 tbsp of Greek yogurt at the end, off the heat, since boiling the soup after the yogurt goes in can make it split.

10 min

Brown the beef

Season the ground beef with salt, garlic powder, and thyme. Brown in a pot over medium high heat, then add the tamari and a splash of water. Simmer to let the flavors come together, seasoning again to taste.

10 min brown, 5 to 10 min simmer

Portion everything

Divide the soup into containers. Build the beef bowls with roasted sweet potato, black beans, and the beef, keeping the avocado, cilantro, and lime aside to add fresh when eating.
