Prep the produce

Cross-hatch the zucchini with a knife and sprinkle with salt so it can sit and release water while you work. Peel and cube the sweet potato. Thinly slice the red onion.

Roast the sweet potatoes and peppers

Preheat oven to 425°F (220°C). Toss and spread the sweet potatoes on a sheet pan with their spices and oil, and get them in the oven first — these take the longest. Roast the peppers on a separate pan until blackened, then transfer to a covered bowl to steam.

Sear then roast the chicken

Mix the spice rub and coat the chicken thighs. Sear skin-side down in a hot oven-safe skillet until the skin is crisp and golden, then flip and transfer to the oven to finish alongside the sweet potatoes. Brush with maple syrup glaze in the last few minutes for a glossy finish.

5–6 min sear + 10–15 min roast (or until thermometer reads 165°F) + 3–4 min glaze

Start the farro and beans

Toast farro in a pot, add broth, cinnamon stick, and bay leaf, and simmer. In a separate skillet, bloom garlic and tomato paste with spices, then add the white beans and chicken stock to simmer.

Finish the zucchini and pickled onion

Blot the released water off the zucchini, then sear in a hot pan until golden and finish in the oven. Heat the pickling brine (with coconut sugar) and pour it over the sliced red onion.

Whisk the sauce

While everything finishes cooking, whisk the smoky paprika-yogurt sauce.

Finish with the fast components

Sauté the spinach and boil the eggs last — boil 7 minutes, then season simply with salt and pepper once cut open. Peel and slice the roasted peppers once cool enough to handle.
